Chef David Myers Unveils India’s First Japanese-Inspired After-Hours Concept 

Delhi, India (March 18, 2025) –  When the clock strikes 10:30 PM, Adrift Kaya undergoes a dramatic transformation. The refined izakaya, known for its impeccable Japanese flavors, sheds its fine-dining skin to reveal Neon Nights—a tribute to Tokyo’s pulsating after-hours culture, making its debut at JW Marriott New Delhi Aerocity on March 21st. This first-of-its-kind concept, brought to India by Michelin-starred Chef David Myers, reimagines nightlife by blending underground energy with exquisite culinary craftsmanship. 

Like the neon-lit streets of Shinjuku and Shibuya, Neon Nights electrifies the senses. A secret menu—bold, elusive, and available only for those who dare to ask—promises a gastronomic adventure laced with intrigue. Think Toro Tartare with Sriracha and Crispy Rice, Sweet Corn Tofu Tempura with Black Vinegar Sauce, and Yakitori Chicken Meatballs with Onsen Tamago and Teriyaki Glaze. Pair these with cocktails that capture the soul of Japan’s vibrant bar culture, such as the fiery Fire Akuma, a Suntory Toki whiskey concoction laced with chili, or the ethereal Coco Geisha, a delicate blend of sake, coconut water, and bitters. 

Helming the bar program is celebrated mixologist Akshay Kumar, whose mastery in crafting boundary-pushing cocktails makes each drink a journey through the streets of Japan. With influences drawn from Tokyo’s highball culture and Kyoto’s tea houses, his creations redefine the art of Japanese mixology. 

Speaking on the launch, Chef David Myers, known globally as the ‘Gypsy Chef’, expressed his excitement: “Japan has always been my greatest muse—the energy, the flavors, the hidden alleyways filled with life and mystery. With Neon Nights, I wanted to bring that intoxicating spirit to Delhi—where food, music, and the night come alive in a way never seen before.”
